Lemon Cake Recipe
Moist Lemon Cake with Glaze
1 box yellow cake mix
4 eggs
¾ cup oil
1 tsp lemon extract
1 pkg lemon Jello powder
1 cup wate
1 cup powdered sugar
Lemon juice
Preheat oven to 325F.
Heat water, and dissolve Jello powder. Let it cool. In another mixing bowl, beat cake mix, eggs, oil and lemon extract for 1 minute. Pour in cooled Jello liquid and beat again for another minute.
Pour batter into a 9x13 greased cake pan, and bake for half an hour. When finished, let it cool. Meanwhile, make glaze by mixing powdered sugar with enough lemon juice to make it runny. Poke holes in the cake, as far down as you like. A wooden spoon handle would work. Then pour glaze over the cake and let it soak in before serving.
