Coconut Cake
Coconut Cake Ingredients
2 cups self raising flour, sifted
2 cups coconut cream
2 eggs, lightly beaten
1+ 1/4 cups castor sugar
8oz (or 225g) desiccated coconut
Coconut Cake Directions
Preheat oven to 355 degrees F (or 180 degrees Celsius).
Into a large bowl, combine the sugar, flour, desiccated coconut & lightly beaten eggs.
Mix dry ingredients.
Pour in coconut cream.
Stir until all ingredients are well combined and there are no lumps.
Pour cake mixture into a greased 12 inch (or 30cm) cake tin.
Bate for 35 minutes.
Remove cake from oven and allow it to cool down too room temperature while it's still in the tin.
After it's cooled, tip the cake out and dust lightly with some sifted icing sugar.
Delicious served sliced wtih a dollop of whipped cream.
