Chocolate Cake Recipe

Swiss Chocolate Cake

1 ¾ cups cake flour
2 tsp baking powder
¼ tsp baking soda
1 tsp salt
1 ½ cups sugar
½ cup butter, softened
1 ¼ cups evaporated milk
2 eggs
2 ½ oz unsweetened baking chocolate
1 tsp vanilla

Preheat oven to 350F.

In a large mixing bowl, stir together dry ingredients: flour, baking powder, baking soda, salt and sugar. Stir in butter and 1 cup of milk. Beat for around 2 minutes with an electric mixer at medium speed.

Melt chocolate, either in the microwave or in a double boiler. Add melted chocolate, eggs, vanilla and the last quarter cup of milk to the flour mixture. Beat for another minute. Pour the batter into 2 9-inch baking pans that have been lined with parchment.

Bake both pans for 25 to 30 minutes. Let them cool, and then frost with any chocolate frosting to make a 2 layer cake.
