Carrot Cake Recipe

 

Carrot cake is always a winner in our house. The kids will love this tasty cake.

Classic Carrot Cake

2 cups flour
2 tsp baking powder
2 tsp cinnamon
2 tsp salt
2 tsp baking soda
1 cup oil
2 cups brown sugar
4 eggs
1 cup chopped walnuts
3 cups carrots, grated

Preheat oven to 350F.

In a mixing bowl, stir all dry ingredients together. Blend in the oil, and then the eggs (one at a time). Beat the batter between each egg. Stir in nuts and grated carrot until well blended.

Pour batter into a greased 13x9 cake pan. Bake for 45 minutes. Serve plain, or frosted with cream cheese frosting.
